Some barrels are filled direct from press pan and others with minimal settling, batonage and long elevage in tight grain French oak. Intoxicating aromas of citrus, sea foam, mineral and baking spice. The high elevation Bois Joli Vineyard sits on the southwest facing tip of the Amity Hills, overlooking the city of Amity and the Coast Range, directly facing the Van Duzer Corridor. The 2018 Chardonnay was whole cluster pressed long cycle with minimal settling, barrel fermentation and elevage in extra tight grain French oak. Moderate batonage and finished in stainless tank prior to bottling. Aromas of wet stone, tree fruit and exotic spice.
